Korea 1 Pack of dangmyun – Korean starch noodles (soaked in hot water for 30 minutes, drained1 medium onion (thin sliced), 1/2 carrot (thin julienne), 1 bunch spinach blanched, cut into 3 inches10 ounces thin sliced beef, 5 green onions (cut in a bias), 7 shiitake mushrooms dehydrated, thin slicedBeef Marinade: 1 tablespoon soy sauce, 1 tablespoon sugar, 1 teaspoon sesame oil, 1 teaspoon minced garlic, 1/4 teaspoon pepper, 1/2 teaspoon sesame seeds.Shiitake Marinade: 1/2 teaspoon soy sauce, 1 teaspoon sugar, 1 teaspoon sesame oil.Dangmyun seasoning: 1 1/2 cup water, 1/4 cup sugar, 2 tablespoons soy sauce, 4 tablespoons vegetable oil. In a non-stick pan, add oil and sauté vegetables, just enough to be softened. Saute and move to a big bowl to cool a little bit.All ingredients need to be cooked separately. Using the same pan, start with light colored vegetables to cook. An ideal order would be onion, green onions, carrots, shiitake mushrooms and then beef.Put a non-stick wok or large pan on medium heat. Add dangmyun seasoning and poor in dangmyun.Bring to a boil and stir occasionally for a few minutes until dangmyun absorbs water.After 10-15 minutes, the noodles will start to stick together. From this point, stir constantly until the noodles get soft and translucent.Take off from heat and let cool for awhile. If needed, cut the length. Mix with vegetables, sesame seeds, and saltand pepper to taste.
