Fish and poultry are more common thanbeef and sausage. Place: It's surrounded by water, so seafood is very popular. Also fertile land provides farmers togrow rice, beans, wheat, tomatoes, and eggplant.Trees have nuts apricots, and lemons. Animals are a source of food because they provided milkand cheese. Moussaka 2 medium eggplants, thinly sliced 3 Tablespoons olive oil 2 medium onion, diced 2 green peppers, seeded and diced 4 cloves garlic, minced 1 1/2 pounds ground lamb or beef 2 teaspoons paprika 1/2 teaspoon black pepper 1/4 teaspoon salt 1/2 teaspoon cinnamon 3/4 cup plain yogurt 4 egg yolks 1 Tablespoon flour Ingredients In a large skillet, heat the olive oil and brown the onion, peppers, and garlic. Add the ground meat, paprika, pepper, salt, and cinnamon. When the meat is crumbled and cooked, put it in a bowl and set aside. Sauté the eggplant slices in the skillet, adding more oil if needed. Brown on both sides, remove, and set aside. In a large casserole dish, alternate layers of the eggplant and the meat mixture. Preheat oven to 350°F. Place cover or aluminum foil over the dish. Bake for 45 minutes. In a mixing bowl, beat together the yogurt, egg yolks, and flour. Remove the casserole from the oven and remove cover. Spread the yogurt mixture over the top of the moussaka. Return uncovered casserole to the oven and bake for 15 minutes. Serve hot. Procedure This recipe is a typical Greek dish because it includesmany vegetables centered around some meat.
